Vegan soft chow mein from last night's dinner

Heres my recipe for easy vegan, Ayurevedic Dahl.
1 cup red lentils
5 cups water
1 tsp ground turmeric
2 tsp ground coriander 1.5 tsp fresh grated Ginger
1.5 tsp salt
2 tbs coconut oil 1 tsp cumin seed
.25 cup chopped cilantro (optional, garnish)
1. Combine lentils, water, turmeric, coriander, and Ginger in a stockpot. Bring to boil. Reduce to Low and cover. Simmer for 30 mins
2. Turn off heat and add salt 3. In a saucepan, warm coconut oil over medium heat. Add cumin seed and sauté until brown/aroma is released. 4. Pour lentils into saucepan and cover for about 2 minutes. Add cilantro (optional) Serve alone or over brown rice. Enjoy! Eric
